Our Story
Vitalmindmealcraft began with a simple observation: in our modern kitchens, we had lost touch with the seasons. Tomatoes arrived in winter, strawberries in snow, and the rhythms that once guided our ancestors' tables had faded into supermarket uniformity. We started asking difficult questions about what we were really eating, and why so many felt disconnected from their food.
From those questions grew a conviction—that eating seasonally isn't a luxury or a trendy practice, but a return to something essential. Seasonal ingredients are at their nutritional peak, they cost less, they taste better, and they connect us to the land and climate around us. We founded this workshop series to share that knowledge with cooks in Romania who wanted to understand not just recipes, but the philosophy behind them.
Each workshop we conduct is built on research into agricultural cycles, culinary tradition, and practical home cooking. We work with local farmers, seasonal produce suppliers, and experienced instructors who understand that learning to cook seasonally is learning to cook intelligently. Every session celebrates the crops currently at their best, the dishes that make sense for the weather, and the mindfulness that comes from eating in harmony with nature.

Our Team
Alexandra Moldovan
Workshop Director & Lead Instructor
Alexandra brings over twelve years of culinary instruction and seasonal kitchen research to every workshop. She trained at the Culinary Institute in Bucharest and spent three years studying traditional seasonal cooking practices across Romanian rural communities. Her passion for reconnecting urban cooks with agricultural rhythms drives the philosophy behind all our programs. When not teaching, she works with local farmers' cooperatives in Iași to source the finest seasonal produce.
Radu Ionescu
Nutritional Science Advisor
Radu holds a degree in Food Science from the University of Iași and brings evidence-based insights into why seasonal eating aligns with our bodies' nutritional needs.
